Description
This product is certainly for connoisseurs. It is made with goat’s milk and is less fat and consequently contains less cholesterol. It can therefore be assumed by everyone. It has an average maturation of 6 months and the consistency is semi-hard.
It takes its name from Cynara Cardunculus which is a particular type of wild thistle from which the vegetable rennet with blue flowers is extracted.
It is history that in the fifth century after Christ the cheese was coagulated with the vegetable rennet extracted from the aforementioned thistle (manuscript source by Lucio Giunio Moderato Columella).
This particular type of cheese is made with the methodology just described.
